About Me

Hi, I’m Maria. Welcome to Vegetable Meal Prep Ideas!

If you’ve ever stood in front of your fridge on a Sunday night wondering how you’re going to eat well and stay sane during a busy week, you’re in the right place.

I started this blog because I got tired of choosing between “healthy” and “actually enjoyable to eat.” Most meal prep content out there felt like it was written for people who love bland chicken and broccoli five days in a row. I wanted something different  vegetable-forward meals that are exciting enough that you actually look forward to opening your lunch container.

Why Vegetables, Why Meal Prep?

Vegetables get a bad reputation as the “side dish” of the food world. I’m here to flip that. When you build your meals around vegetables with the right seasoning, textures, and a little planning  they become the star of the show, not an obligation.

And meal prep isn’t about eating the same sad bowl all week. It’s about:

  • Saving time on busy weeknights
  • Saving money by cooking with intention instead of impulse
  • Eating better without needing willpower at 6pm when you’re starving
  • Reducing food waste by using what you buy

A Little More About Me

My journey into meal prep started out of pure necessity, not passion. A few years ago, I was juggling a packed schedule and kept falling into the same trap every evening: too tired to cook, too broke from ordering takeout, and too hungry to make good decisions. I started setting aside a couple of hours on weekends just to get ahead, and what began as a survival tactic slowly turned into something I actually enjoyed. Vegetables became my go-to because they held up well through the week, and I loved experimenting with ways to keep them exciting instead of boring. These days, meal prep isn’t a chore for me, it’s the thing that gives me my evenings back.
